@paco the connector looks like a standard K-type thermocouple connector.

@paco the back of the thermoworks reader says it is a type k thermocouple. They are very standard. There will be a million examples projects if you google βesphone type k thermocoupleβ that will guide you in the right direction.
A quick search of my own finds https://esphome.io/components/sensor/max6675/ which uses a MAX6675 chip to read the probe

@paco Exactly, and that's why you want to look into ESPHome, which is an addon for Home Assistant which let's you add custom devices to your existing HA setup quite easily (if all goes well). These custom devices will usually be based on ESP32 and the likes.
