I'd never made kasha varnishkes before and now that I have, I've emailed mom to ask if she has grandma's recipe. Because what I made was good, and it was almost right, but it wasn't *exactly* what I remember from my childhood.
...and mom just replied saying "she probably followed the recipe on the back of the Wolff's box" so I guess I can do whatever I want now

@emery Just keep making your grandma's recipe, and gradually, you'll make it your own. I got my M-I-L to make all of her specialities, and I took measurements and notes. Gradually, I was making her dumplings with at least half whole wheat flour, and with seasoned salt, instead of the plain stuff. I've been doing the same kind of thing with the kimchi recipe I started with, adding apples, maple syrup, daikon, etc...
I quite like kasha, but I've been onto other food styles lately. Experimented with roti tonight. They'll need work, but were edible. -

There you go! Gradually, whatever you make will taste like you made it "right"! That's excellent that you immediately got buy-in from your husband. There are so many kinds of dumplings in the world, and I'd like to eat ALL of them!! -

And yes, I do want all the dumplings. ALLLLL the dumplings.Though kasha varnishkes isn't dumplings, I have had kasha knishes.. which is kind of like dumplings? Not really, lol.

@emery A lot of folks classify perogies and varenekis, mandu, gyoza, and various boiled, stuffed items as “dumplings”. Knishes and steamed buns are closely related. When I travelled to Winnipeg a few years ago, I had to visit the bakery that still sells knishes after many years.

@EllenInEdmonton Sure, all of those things are dumplings... but kasha varnishkes isn't stuffed anything. It's just a big pile of kasha and bowtie pasta, with caramelized onion and sometimes mushroom. Like a pilaf.
