I discovered these silicone portion cubes for the freezer from some friends on a Discord for people with Chronic illnesses and issues. I gotta say, I'm loving this. I've yet to try the other things like veggies, gravies, even pasta that they showed me, but my first two forays are awesome.

I got the two-pack of gumbo and a two-pack of the GOOD marinara at Costco, far more cost effective than Rao's at the regular grocery store. Two of these little cubes are a portion, and one of the gumbo. Not only am I not wasting leftovers in the fridge before I'm in the mood to have it again, I'm only defrosting what I need and not an entire package.

Yeah, I only have room currently to freeze 1 of the big trays OR two of the little ones at a time, but it's ready to put in labeled freezer bags the next day. As I clear out the freezer, that'll get better. The frozen things pop out super easy and I can also see exactly how many meals I'm getting for my money. Example: 2 of those cubes of sauce are a portion the way I like it. The two jars filled two trays and has enough left over for my lunch or dinner, so that's really 7 portions, or 7 meals. (or me, then 3 meals for me and the person I live with. Still not bad at all.) Links to where I bought them at the end, I'm not an affiliate so I don't get anything for recommending things. Also not why I do it.)
