I remember this now. With a very young starter, this - and the rather tight crumb with a few large bubbles - is a sign of under-proving. Starter needs a few more days to reach its final form 
First test bake with the new sourdough starter. Oven spring went crazy, so safe to say the starter is at leastโฆ effective
