    In extended hot weather my Extended Hot Weather habits suddenly come to life. The large teapot has been brought to the kitchen. A good bunch of herbs from the garden is added. A couple of pieces of liquorice root for sweetness. The herbal tea is made, left to cool and put into bottles in the fridge. The ice compartment has had its water topped up.

      The vine leaves are rolled for fermentation, put into a jar, and salt and water added. We are on our way!

      My learning is that a wide mouth jar makes life easier.

        Wide-mouth jars are far superior for fermentation. I have the pickle pebbles and pickle pipes for multiple jars now, so that everything can let out gasses, without collecting unwanted bacteria.
        The weekend was my mini-fermentation party, since I gave away a lot of jars over Christmas. Also, I had a bit of additional time at home.
