@paco the connector looks like a standard K-type thermocouple connector.

@franz_e Iβm not changing out my whole home automation system. I have dozens and dozens of devices on home assistant. Just looking to add this one.

@paco the back of the thermoworks reader says it is a type k thermocouple. They are very standard. There will be a million examples projects if you google βesphone type k thermocoupleβ that will guide you in the right direction.
A quick search of my own finds https://esphome.io/components/sensor/max6675/ which uses a MAX6675 chip to read the probe
